Stuffed Avocado

Ingredients

  • 3 medium avocados
  • ½ cup chopped red capsicum
  • ½ cup chopped red onion
  • ½ cup chopped rindless bacon
  • ½ cup grated parmesan cheese

Method

Grill bacon and place on a paper towel to drain.

Sautee capsicum and red onion with a drizzle of avocado oil.

Cut avocados in half and remove the seed.

Spoon capsicum, onion, and bacon into avocado halves and top with parmesan cheese.

Place under grill for approximately 2 minutes or until cheese melts. Sprinkle with cracked pepper & serve.
